Cherry Balsamic Pork Chops with Thyme-Roasted Potatoes and Broccoli

I wasn’t sure what to expect from this particular combination of flavors. Cherry jam and balsamic vinegar on pork chops? Sounded iffy.

When I took that first bite of the cherry glazed pork chop, I encountered a burst of delicious flavor. I said, out loud, literally, WOW! That made Gail’s eyes grow wide as she wondered if that was a good WOW or a bad WOW.

It was definitely a good WOW, which she quickly agreed with. We both loved this entire meal. The potatoes and broccoli were both very tasty.

The prep and process was extremely easy as well. All in all, this is a great dish!

Tip

Glance through the recipe instructions before you begin. Some recipes ask you to chop veggies in the middle of the process, usually while something else is cooking on the stove. I recommend ignoring those instructions. Instead, prep all your veggies before you do anything else. (You can preheat your oven during this time). If you are anything like me, trying to chop vegetables while watching over the cooking process will usually end up with overcooked or burned food, or even knicked fingers.
