This is what packing for the move looks like right now.

Notice that empty cabinet? They are all empty now. I have one small box on the countertop with the few things I thought we’d need to get by during the next two weeks. The basics, you know…salt, pepper, olive oil, sugar, aluminum foil, a few utensils, and a few pots and pans. Of course, I’m bound to have packed a few things I’ll need, right? Right.

Where Is Everything?

Little things like plastic wrap. I needed that for the green beans so they didn’t cook right. And while I was running around trying to find things I needed, the chicken was over-cooking. Dang it! It would have been good too, because the cherry jam sauce was delicious, but unfortunately the chicken was the consistency of a rock. The green beans were vying to be as hard as the chicken, but the chicken won that round.

It Wasn’t All Bad

The rice, on the other hand, was really good. Yay me! I did something right tonight! The process was interesting too. Have you ever cooked a pot of rice with pineapple in it? I hadn’t…until tonight. I never would have even thought about doing that, but it was great. Just melt a little butter, throw some drained pineapple chunks in for a minute and then add the water and rice to the pot. Cook the rice just as you would normally for about 15 minutes (covered, on low). This was Basmati rice but I think any rice would work as well.

Moral of the Story

You might want to skip a week or two of meal kits when you are packing to move. That’s probably the right time for fast food and takeout!

Tip

Glance through the recipe instructions before you begin. Some recipes ask you to chop veggies in the middle of the process, usually while something else is cooking on the stove. I recommend ignoring those instructions. Instead, prep all your veggies before you do anything else. (You can preheat your oven during this time). If you are anything like me, trying to chop vegetables while watching over the cooking process will usually end up with overcooked or burned food, or even knicked fingers.
