Chicken Tomatillo Tacos

I was tired and thought this would be a great meal to make when I didn’t have much energy. There were only a few ingredients, just one pan, and it looked simple. I was wrong. That may be my fault, I’m not sure. But let me tell you, that chicken kicked my ass. Why?

The directions said to cut the boneless chicken thighs into half-inch pieces. I don’t know if there is some special sort of knife I should be using to cut up chicken thighs, but if so, it sure as heck wasn’t the ones I tried using!

Half-inch pieces? Are you kidding me? I had to use all my strength and energy just to get that meat into 1 or 1 1/2 inch pieces! After about 20 minutes of working my arm muscles, I gave up, and put those 1-inch (and bigger) pieces into the dang pan!

Once they started to brown some, I used the spatula to break the larger hunks into smaller bits. That was easier than trying the same thing with a knife earlier.

By the time I finished plating it, I was grumpy and had already made up my mind that the dish wasn’t worth all the trouble I’d gone through for it. And I was right about that.

It was tasty enough to eat it all, don’t get me wrong. It just wasn’t good enough to justify the work I put into it. And frankly, it didn’t taste “fancy enough” or “healthy enough”, ya know? I mean, I’m doing this whole meal kit thing to up our game, and these tacos didn’t feel worthy of that.

My one other complaint is that there wasn’t NEARLY enough sour cream for all these tacos. Each one had a tiny dot on them. That just doesn’t cut it in the Cavalier household.

Finally, I’m not fond of just warming tortillas in the microwave. I like browning them a bit in a pan, so from now on, I’ll ignore those tortilla-microwaving instructions if they ever show up again.

Summary

My attempt at cutting up chicken thighs into half-inch pieces just about did me in. The effort required completely overwhelmed the mediocre end result of these chicken tomatillo tacos. No go.

Tip

Glance through the recipe instructions before you begin. Some recipes ask you to chop veggies in the middle of the process, usually while something else is cooking on the stove. I recommend ignoring those instructions. Instead, prep all your veggies before you do anything else. (You can preheat your oven during this time). If you are anything like me, trying to chop vegetables while watching over the cooking process will usually end up with overcooked or burned food, or even knicked fingers.
