Eggplant Pirogue Deliciousness

Today’s Bloganuary prompt is:

What’s your favorite meal to cook and/or eat?

I don’t have a favorite meal I like to cook. I do have two recipes here on my site for dishes that Gail likes me to make. But I’d rather share one of my favorite meals to eat rather than cook.

I say “one of” because this one isn’t really my absolute favorite. My absolute favorite would be my mom’s crawfish bisque, but she’ll never be able to make that again, so let’s focus on something I could actually get in a restaurant. That honor goes to Copeland’s Eggplant Pirogue.

(A pirogue is a small flat-bottomed boat that Cajuns often use in shallow bayous. The word is pronounced like “pea-row”).

Eggplant Pirogue consists of breaded, fried eggplant slices sitting on top of angel hair pasta. A marvelously rich, savory shrimp au gratin seafood sauce is poured over the stack of eggplant slices and mixed with the pasta. I think the restaurant would actually scoop out the eggplant and make little boats out of them, hence the name, but now it’s just stacks of eggplant slices. Or maybe the original recipe was scooped out eggplants but Copeland’s modified it. I’m not sure. Either way. Yum.

Similar dishes that I enjoy are any kind of fish with a crawfish au gratin or béchamel sauce poured over it. Dishes like Crawfish Monica or dishes with names ending in Pontchartrain or Louisianne all tend to be similar. Any kind of hollandaise, au gratin, or béchamel sauce combined with shrimp, crab or crawfish, poured over fish or eggplant or other main ingredients, and possibly involving pasta is a heavenly experience. Oh! And pour that same seafood sauce over a baked potato, and wow. Kickass flavor. Here’s what some of this looks like.
