Meatloaf Balsamico with Sweet Potato Mash and Green Beans

This meal is in Hello Fresh’s Hall of Fame, and I can see why. The meatloaf was delicious and moist. The balsamic sauce really made a tasty difference. The one adjustment I’d make to it next time is to use a little less onion. I loved it just like it was, but Gail would like a little less.

The mashed sweet potatoes were a nice change of pace, and the oven-roasted green beans were good too. Next time though, I’ll add a little extra butter to the sweet potatoes, and cook the green beans another few minutes, as we like them a little more tender.

All in all, this was a great meal, and I can see using this same meatloaf for tasty sandwiches.

Tip

Glance through the recipe instructions before you begin. Some recipes ask you to chop veggies in the middle of the process, usually while something else is cooking on the stove. I recommend ignoring those instructions. Instead, prep all your veggies before you do anything else. (You can preheat your oven during this time). If you are anything like me, trying to chop vegetables while watching over the cooking process will usually end up with overcooked or burned food, or even knicked fingers.
