Pan Fried Gnocchi with Spinach and Yellow Squash

We enjoyed this dish a lot. I enjoyed making it because it was easy. The flavor was good, and it was very filling and satisfying.
Quick, Easy, Filling, Tasty - That's a pretty good combo

Gnocchi is becoming a favorite in our household. This is a nice comfort food and I can see this being a go-to dish that I could whip up on my own at any time, as long as I can find gnocchi in the supermarkets here. (That’s questionable at this point, but I haven’t looked yet).

Not All Ingredients Made It

The basil was beyond its end of life by the time I made this dish. It was the last of 3 bags from the week, so I guess it was just a little too long to wait before it withered away into a mush. So perhaps the meal would have tasted a bit different if I’d added the basil to it, but it was very good without it.

Loved The Easy Prep

Grating the squash was an easy and fun way to break this ingredient down, and super-quick. Roughly chopping the almonds probably took the longest time, but honestly, I don’t think they added much to the dish, so next time, I’d probably skip it all together, and that would mean it would take even less time to prepare.

Mostly Waiting

Usually these meal kits require a constant juggle of doing one thing while other things cook. But this was the first time I just stood around waiting as the ingredients cooked. There wasn’t a lot of work to do throughout the process. That was a nice change.
