Presto Pesto Panko Chicken with Roasted Potatoes and Green Salad

This dish is the first one I've tried that I really didn't like. Gail liked the chicken. I didn't like it at all. Way too strong of a pesto flavor, but perhaps I overdid it. The potatoes were great, though!

This dish is the first one I’ve tried that I really didn’t like. Gail liked the chicken. I didn’t like it at all. Way too strong of a pesto flavor. The potatoes were great. They were Yukon Gold potatoes, which are my favorite. The salad was not so good. Even though Gail liked the chicken, she agreed that she didn’t like it enough to justify ordering this one again. Thumbs down.

  • Difficulty Level (5 = easiest)
  • Cleanup (5 = quickest)


Good potatoes. Way too much pesto on the chicken. Really not crazy about this dish.

Glance through the recipe instructions before you begin. Some recipes ask you to chop veggies in the middle of the process, usually while something else is cooking on the stove. I recommend ignoring those instructions. Instead, prep all your veggies before you do anything else. (You can preheat your oven during this time). If you are anything like me, trying to chop vegetables while watching over the cooking process will usually end up with overcooked or burned food, or even knicked fingers.
