Summary

This pulled pork fiesta bowl meal kit will please almost everyone. Or that’s my guess anyway. Good flavors and plenty of food makes this one a hearty, feel-good dish. The prep work wasn’t too time-consuming and the cleanup was a breeze. But mostly, this is just a meal that I think would be a crowd-pleaser so we’ll have this one more often, I’m sure.

Even though there was a pot of rice to cook, it feels like a one-dish kind of meal. Sometimes I’m in the mood for food that’s “all mixed up together”, rather than a main meal with separate side dishes. This would also make a great lunch to-go type of meal. Throw it all in a container, head off to work, and heat it up at noon.

Tip

Glance through the recipe instructions before you begin. Some recipes ask you to chop veggies in the middle of the process, usually while something else is cooking on the stove. I recommend ignoring those instructions. Instead, prep all your veggies before you do anything else. (You can preheat your oven during this time). If you are anything like me, trying to chop vegetables while watching over the cooking process will usually end up with overcooked or burned food, or even knicked fingers.
