Summary

I love when a dish surprises me. The fish was easier to cook than I expected. I assumed it would fall apart, and that none of the breading would stick to the fish, as that seems to be my past experience. But it cooked easily, the breading stayed on the fish, and nothing fell apart. The rest of the meal was even easier to prepare. This one is about as easy as it gets. But what about the flavor?

Gail and I both made this comment after the first few bites. “Mmm, this is pretty good!”

Gail would have liked a little sauce on the beans. When I asked her what kind of sauce, she didn’t know. Just something. Personally, I loved the beans, but thought the couscous was a little dry, and it could have used a little sauce. Both of those things are just nitpicking though. All in all, the dish was “pretty good”.

Tip

Glance through the recipe instructions before you begin. Some recipes ask you to chop veggies in the middle of the process, usually while something else is cooking on the stove. I recommend ignoring those instructions. Instead, prep all your veggies before you do anything else. (You can preheat your oven during this time). If you are anything like me, trying to chop vegetables while watching over the cooking process will usually end up with overcooked or burned food, or even knicked fingers.
