Tilapia Tacos in Our New Home

I like the island feel to this Hello Fresh meal kit. The bright flavor of the kiwi pico de gallo gave the fish tacos a pleasant kick.

Happy New Year, everyone! You might have noticed that I took a break for a few weeks. That’s because we moved to a new home in a town an hour away from where we lived before. We all know how painful it is to move. Our move was that painful and more! But I’m not here to complain. I’m excited to be settled in and finally getting new meal kits delivered again! We’ve both missed them a lot.

So now I have a new kitchen to cook in, and for my birthday, Gail gave me a new ceramic pan that I’ve been wanting. I’m excited to be able to cook in my new kitchen with my new pan. It is a joy to cook with.

Summary

Gail was skeptical when I told her we were having fish tacos. I know it’s a normal food item in many parts of the world, but here in Cajun Country, fish and tacos aren’t generally thrown together in the same sentence, much less the same plate. But I promised her she would like it.

The worst part about the meal prep was the time it took to thinly slice the radishes, and honestly they really didn’t add to the flavor at all, so I could have skipped that part. But the kiwi-lime pico de gallo gave the fish tacos a nice flavor kick. Forget about the radishes and you’ll have a really quick flavorful meal that almost makes you feel like you’re relaxing on a tropical island.

Did Gail like them? She said she’d give it 4 stars and said, “I’d eat this again”. Maybe not the highest praise the meal could get, but I’ll take it!

Tip

Glance through the recipe instructions before you begin. Some recipes ask you to chop veggies in the middle of the process, usually while something else is cooking on the stove. I recommend ignoring those instructions. Instead, prep all your veggies before you do anything else. (You can preheat your oven during this time). If you are anything like me, trying to chop vegetables while watching over the cooking process will usually end up with overcooked or burned food, or even knicked fingers.
