Tomato Pesto Flatbreads

These tomato pesto flatbreads are quick and easy, with plenty of flavor. A little too crispy for our taste, but if you like crispy pizza, you'll like this.

The fresh mozzarella, pesto, and heirloom grape tomatoes give this meal kit lots of flavor, and the easy fingerfood style is perfect for those nights you want to eat on the couch while watching TV. We aren’t generally the type to like crunchy pizza crust, so that same lack of fondness also applied to the crispy, crunchy flatbread. If the flatbread had been soft and chewy, it would have earned 5 stars from us, most likely. But if you’re a crunchy fan, you’ll probably love this dish even more than we did.

The prep work was super easy, and cleanup was almost nonexistent! A big ol’ woohoo for that!!

Glance through the recipe instructions before you begin. Some recipes ask you to chop veggies in the middle of the process, usually while something else is cooking on the stove. I recommend ignoring those instructions. Instead, prep all your veggies before you do anything else. (You can preheat your oven during this time). If you are anything like me, trying to chop vegetables while watching over the cooking process will usually end up with overcooked or burned food, or even knicked fingers.
